Instructions

  1. Combine Ingredients: In a large bowl, add the cubed seedless watermelon and seeded, chopped English cucumber. Toss them gently to mix.
  2. Add Mint and Lime Juice: Add the chopped or torn fresh mint leaves to the bowl along with 3 tablespoons of lime juice. Stir to evenly distribute the flavors.
  3. Season and Serve: Season with salt and black pepper to taste. If serving immediately, toss again to incorporate all ingredients and serve right away.
  4. Refrigerate If Not Serving Immediately: If not serving the salad immediately, leave out the salt, cover the bowl, and refrigerate for up to four hours. Before serving, toss the salad with salt to finish.
