Mascarpone Cream

  • 250 g mascarpone cheese, room temperature
  • 240 ml heavy cream
  • 50 g powdered sugar

  • 2 tablespoons espresso powder
  • Cocoa powder, for dusting

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper to prevent sticking.
  2. Melt Chocolate and Butter: Combine the chopped dark chocolate and unsalted butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
  3. Add Sugars: Stir in the brown sugar and granulated sugar into the melted chocolate mixture until fully combined.
  4. Incorporate Vanilla and Eggs: Add the vanilla extract, then whisk in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  5. Fold in Dry Ingredients: Sift together the flour and salt, then gently fold or whisk them into the wet mixture until just combined to avoid overmixing.
