Ingredients

Scale

Cheese Mixture

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Tomato Topping

  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Garnish

  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons balsamic glaze
  • Toasted baguette slices, for serving

Instructions

  1. Preheat and prepare baking dish. Preheat your oven to 400°F (200°C) and lightly oil a baking dish or an oven-safe skillet to prevent sticking.
  2. Roast the cherry tomatoes. In a bowl, toss the cherry tomatoes with olive oil, minced garlic, salt, and black pepper. Spread the tomatoes on a baking sheet and roast in the oven for 15–20 minutes until the tomatoes are blistered and soft.
  3. Mix the cheeses. While the tomatoes roast, combine ricotta, shredded mozzarella, and grated Parmesan cheese in a bowl. Season the mixture with a pinch of salt and pepper and mix well.
  4. Assemble the dip base. Spread the cheese mixture evenly into the prepared baking dish, creating a smooth base layer.
  5. Add the roasted tomatoes. Spoon the roasted tomatoes and their flavorful juices over the cheese mixture. Drizzle a little olive oil on top and add more black pepper if desired.
  6. Bake the dip. Place the dish in the oven and bake for 15–18 minutes until the cheese is melted and bubbling throughout.
  7. Broil for a golden top. Switch the oven to broil and broil the dip for 1–2 minutes to achieve a golden-brown top. Watch carefully to avoid burning.
  8. Garnish and serve. Remove the dip from the oven, garnish with chopped fresh basil and drizzle balsamic glaze on top. Serve warm with toasted baguette slices for dipping.

Notes

  • For a spicier kick, add a pinch of red chili flakes to the tomato mixture before roasting.
  • Use fresh and high-quality cheeses for the best flavor.
  • To make ahead, prepare the tomato and cheese mixtures separately and assemble just before baking.
  • Baguette slices can be toasted under the broiler or in a toaster oven until crisp and golden.
  • The dip is best enjoyed warm but can be reheated gently in the oven if needed.
