Ingredients

Scale

Vegetables

  • 2 tablespoons avocado oil
  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced

Meat

  • 1 pound turkey sausage

Egg Mixture

  • 10 eggs
  • 1/2 cup milk (plant-based milk can be substituted)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven is heating, chop the vegetables. Grease a 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook the Vegetables: In a Dutch oven or large saucepan, heat the avocado oil until hot. Add chopped onion, green pepper, and sweet potato. Cook for 8-9 minutes, stirring occasionally, until the vegetables begin to soften. Add minced garlic during the last 1-2 minutes and sauté. Remove the cooked vegetables and spread evenly in the casserole dish.
  3. Cook the Sausage: In the same pan, add the turkey sausage. Sauté until fully cooked, breaking it into small pieces as it cooks. Once done, combine the sausage with the vegetables in the casserole dish, mixing well.
  4. Prepare the Egg Mixture: In a bowl, whisk together eggs, milk, dried thyme, salt, pepper, and grated mozzarella cheese until smooth and well combined.
  5. Combine and Bake: Pour the egg mixture over the vegetable and sausage mixture in the casserole dish. Stir gently to distribute the eggs evenly. Bake in the preheated oven for 40-45 minutes, or until the center is firm to the touch. If the top browns too quickly, cover loosely with foil.
  6. Cool and Serve: Remove from oven and let the casserole cool for about 15 minutes before serving to allow flavors to settle and make slicing easier. Enjoy your hearty breakfast casserole!

Notes

  • Plant-based milk can be used as a substitute for dairy milk to make the dish dairy-free.
  • Use turkey sausage for a leaner option; pork sausage can be substituted if preferred.
  • Covering with foil during baking helps prevent excessive browning on top.
  • This casserole can be prepared the night before and baked fresh in the morning.
  • Leftovers can be refrigerated for up to 3 days and reheated.
