Cookie Dough
- 3/4 cup salted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Frosting
- 2 ounces cream cheese (softened)
- 1/4 cup butter (softened)
- 3 cups powdered sugar
- 1/4 cup milk
- 1/4 teaspoon vanilla extract
- pink or red food coloring gel (optional)
- sprinkles (optional)
- Preheat and prepare pans: Preheat your oven to 350°F (175°C) and grease two regular muffin pans thoroughly with nonstick cooking spray to ensure the cookie cups come out easily after baking.
- Cream butter and sugar: In a large bowl, use an electric mixer to beat together the softened butter and granulated sugar until the mixture is light and fluffy, scraping down the sides occasionally to incorporate all ingredients evenly.
- Add egg and extracts: Beat in the egg along with the vanilla and almond extracts until the mixture is smooth and fully combined.
- Mix dry ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking powder, and baking soda ensuring they are well distributed.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture. Stir until just combined to form a cookie dough, being careful not to overmix to keep the cookies tender.
- Form cookie cups: Using your hands, press about 2 tablespoons of dough into the bottom of each muffin cup and then press the dough up halfway along the sides to create a cup shape.
- Bake and shape cups: Bake in the preheated oven for 12 minutes. After baking, allow the cookie cups to cool for at least 15 minutes. Then, gently press the back of a tablespoon or the top of a round spice jar into the center of each cookie to emphasize the cup shape. Let them cool completely before frosting.
- Prepare frosting: In a medium bowl, beat together the softened cream cheese and butter until smooth. Add powdered sugar, vanilla extract, and milk, mixing continuously. Add food coloring gel if desired and adjust the consistency by adding more milk if too thick or more powdered sugar if too thin. The frosting should be stiff enough to hold shape when piped.
- Fill cookie cups: Transfer the frosting to a piping bag fitted with a star tip and swirl it into each cooled cookie cup. Alternatively, you can spoon the frosting in. Top with sprinkles if desired and serve.
Notes
- Do not overmix the cookie dough to keep the texture soft and tender.
- If you don’t have a piping bag, use a plastic bag with the corner snipped off to pipe frosting.
- Allow the cookie cups to cool completely before filling to prevent frosting from melting.
- Food coloring is optional and can be skipped or customized to any color.
- Add sprinkles on top for extra decoration and fun.
