Strawberry Cream Cheese Frosting

  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam (prepared above)
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)

Instructions

  1. Make Strawberry Jam: In a small pot, combine 500g strawberries, 50g granulated sugar, and 1 tablespoon water. Cook over medium-high heat, stirring occasionally until it boils. Continue cooking until the mixture thickens to a jammy consistency that parts when stirred and slowly comes back together.
  2. Cool Jam: Transfer the jam to a bowl and refrigerate until completely cooled and ready to use.
  3. Prep Cake Pans: Preheat oven to 350°F (175°C). Line the bottom of two 6-inch round cake pans with parchment paper rounds and set aside.
  4. Mix Dry Ingredients: In a medium bowl, whisk together 190g all-purpose flour, 75g cocoa powder, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Set aside.
  5. Mix Wet Ingredients: In a large bowl, whisk together 115g melted unsalted butter, 100g light-tasting oil, 100g granulated sugar, and 100g brown sugar until combined. Add 2 eggs and whisk until smooth.
  6. Combine Batter: Alternately add half of the dry mixture, then half of 330g milk, mixing gently after each addition until just combined.
  7. Fill Pans: Divide batter evenly (~540g each) between the prepared cake pans. Smooth the tops with a spatula or gently tap pans to level.
  8. Bake Cake: Bake for 40-45 minutes or until a toothpick inserted comes out mostly clean with some crumbs attached.
  9. Cool Cakes: Let cakes cool in pans for 10 minutes. Run an offset spatula around edges to loosen, then invert onto a wire rack to cool completely.
  10. Prepare Frosting: Beat 115g softened unsalted butter with 250g softened cream cheese until creamy. Add 100g powdered sugar and beat on low speed until combined. Add 70g cooled strawberry jam and 1 teaspoon vanilla extract; beat again until smooth.
  11. Level and Slice Cake Layers: Use a serrated knife to level any domed tops and slice each cake in half horizontally to create four layers.
  12. Assemble Cake Layers: Place first cake layer on turntable. Pipe a ring of frosting around edge to form a barrier.
  13. Add Filling: Spread about 4 tablespoons strawberry jam inside frosting ring, smooth evenly. Add a layer of 200g finely diced strawberries on top.
  14. Repeat Assembly: Add next cake layer and repeat filling process until all layers are stacked.
  15. Crumb Coat: Apply thin layer of frosting around cake to seal in crumbs. Smooth and chill briefly if needed.
  16. Final Frosting: Frost entire cake smoothly. Use spatula to create decorative swirls in frosting.
