Ingredients

Scale

Main Ingredients

  • 1 cup cooked lentils (green or brown)
  • 2 cups fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. Combine the ingredients: In a large mixing bowl, mix the cooked lentils, chopped spinach, breadcrumbs, Parmesan cheese (if using), chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper until well incorporated.
  2. Add the egg and bind: Add the large egg to the mixture and stir thoroughly until the mixture is fully combined. If the mixture feels too wet and does not hold together, add additional breadcrumbs gradually until it forms a manageable consistency for shaping.
  3. Form the patties: Divide the mixture into 4 equal portions and shape each into a burger patty, ensuring they are compact and even in thickness for uniform cooking.
  4. Heat the skillet and cook: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet. Cook each side for about 4-5 minutes until the patties are golden brown and cooked through.
  5. Serve the burgers: Remove the patties from the skillet and serve them on buns with your favorite toppings such as lettuce, tomato slices, avocado, or a dollop of yogurt to complement the flavors.

Notes

  • To make this recipe vegan, omit the Parmesan cheese and substitute the egg with a flax egg or commercial egg replacer.
  • If the patties crumble while cooking, add a little more breadcrumbs or mashed cooked lentils to help with binding.
  • These burgers can be baked at 375°F (190°C) for about 20-25 minutes if you prefer a baked option instead of stovetop.
  • Fresh spinach can be substituted with kale or other leafy greens of your choice.
  • Leftover patties can be refrigerated for up to 3 days or frozen for up to 1 month.
