A delicious and easy-to-make Spinach and Feta Quesadillas recipe featuring a crispy tortilla filled with fresh spinach and tangy feta cheese, perfect for a quick meal or snack.

Ingredients

Scale

Base Ingredients

  • 4 large flour tortillas (or whole wheat/gluten-free tortillas)
  • 1 cup fresh spinach, washed, dried, and chopped
  • 1 cup crumbled feta cheese
  • 1 tablespoon olive oil or butter

Optional Add-Ins

  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup pitted olives, sliced
  • 1/2 cup grilled chicken, diced
  • 1/4 cup caramelized onions

Instructions

  1. Prep the Ingredients: Rinse and chop the spinach thoroughly to remove any excess water, then crumble the feta cheese into a bowl. If you’re using optional add-ins like sun-dried tomatoes, olives, grilled chicken, or caramelized onions, prepare and have them ready.
  2. Assemble the Quesadillas: Lay one tortilla flat on a clean surface, then evenly spread the chopped spinach and crumbled feta cheese over one half of the tortilla. Add any optional ingredients if desired for additional flavor and texture. Fold the tortilla in half gently, pressing the edges slightly to keep it sealed.
  3. Cook the Quesadillas: Heat a non-stick skillet over medium heat and add a small amount of olive oil or butter to the pan. Place the folded tortilla in the skillet and cook it for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy and the cheese has melted inside. Repeat the process for each quesadilla you prepare.
  4. Slice and Serve: Remove the cooked quesadilla from the skillet and let it cool for a minute. Use a sharp knife or pizza cutter to slice it into wedges. Serve warm with your favorite dips like salsa, sour cream, or guacamole for a satisfying meal or snack.

Notes

  • You can substitute feta cheese with goat cheese or mozzarella for a different flavor profile.
  • Use gluten-free tortillas if you need to keep the recipe gluten-free.
  • Add protein like grilled chicken or beans to make the quesadillas more filling.
  • Cooking on medium heat ensures the tortilla crisps without burning.
  • Serve immediately for the best texture and flavor.
