Ingredients

Scale

For the Sushi Rice

  • 2 cups cooked sushi rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar
  • ½ teaspoon salt

For the Spicy Salmon Topping

  • 12 oz skinless salmon fillet, cooked and flaked
  • ¼ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Other Ingredients

  • ½ cup shredded mozzarella cheese
  • 2 sheets roasted seaweed (nori), cut into small squares
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C) and lightly grease an 8×8-inch baking dish to prevent sticking and ensure easy serving.
  2. Prepare Sushi Rice Base: In a bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Mix everything well to season the rice evenly. Press the rice mixture firmly and evenly into the bottom of the greased baking dish to create a solid base layer.
  3. Make Spicy Salmon Mixture: In a separate bowl, mix the flaked cooked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil until fully combined, ensuring the salmon pieces are coated with the spicy, creamy sauce.
  4. Assemble Layers: Spread the spicy salmon mixture evenly over the rice layer in the baking dish. Then sprinkle the shredded mozzarella cheese generously on top of the salmon layer.
  5. Bake the Sushi Bake: Place the baking dish in the preheated oven and bake for 18-20 minutes, or until the cheese is melted, bubbly, and slightly golden on top. Once done, remove from the oven and allow it to cool slightly for easier serving.
  6. Garnish and Serve: Garnish the baked sushi with thinly sliced green onions and toasted sesame seeds for a fresh, nutty finish. Serve warm with roasted seaweed squares on the side for scooping and enjoying the spicy salmon sushi bake.

Notes

  • You can substitute mozzarella with pepper jack cheese for a bit more kick and flavor complexity.
  • Use fresh salmon and ensure it is fully cooked before flaking to avoid any raw fish in the casserole.
  • Adjust the amount of Sriracha to control the spice level according to your preference.
  • Leftovers can be refrigerated for up to 2 days and gently reheated in the oven or microwave.
  • For a gluten-free version, use tamari sauce instead of soy sauce.
