Chicken
- 2 boneless skinless chicken breasts
- 1/2 teaspoon garlic powder
- Salt & pepper (to taste)
- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
Sauce
- 1 medium onion (sliced)
- 1 clove garlic (minced)
- 1/2 cup chicken broth
- 1 teaspoon Worcestershire sauce
- 1 cup sour cream (full-fat)
- Fresh chopped parsley (optional, to taste)
- Prepare the chicken: Cut the chicken breasts in half lengthwise to make 4 thinner pieces. Sprinkle both sides with garlic powder, salt, and pepper to season evenly.
- Heat the skillet: Add olive oil and 1 tablespoon of butter to a skillet and heat over medium-high heat until hot, about a few minutes.
- Cook the chicken: Place the chicken pieces in the hot skillet. Cook for 5-6 minutes on each side until golden brown and the internal temperature reaches 165°F. Remove chicken from skillet and set aside.
- Sauté the onions: Reduce heat to medium and add the remaining 1 tablespoon of butter and sliced onions to the skillet. Cook, stirring occasionally, until the onions are softened and lightly browned, approximately 10-15 minutes. Adjust heat as needed to prevent burning.
- Add garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Deglaze the pan: Pour in chicken broth and Worcestershire sauce, scraping the bottom of the skillet to lift any browned bits for extra flavor.
- Make the sauce: Stir in the sour cream until the sauce is smooth and heated through, taking care not to let it boil to avoid curdling.
- Combine and serve: Return the cooked chicken to the skillet, spoon sauce over the pieces, and season with additional salt and pepper if desired. Garnish with fresh chopped parsley and serve immediately.
Notes
- For best results, slice the chicken breasts evenly to ensure uniform cooking.
- If you don’t have Worcestershire sauce, a splash of soy sauce can be a substitute.
- To prevent the sour cream from curdling, warm the sauce gently and avoid rapid boiling.
- Serve with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
