Ingredients

Scale

Sausage Filling

  • 1 lb (450g) pork mince (ground pork)
  • 1 packet French onion soup mix (or 1 cup sautéed onions + 1 tsp onion powder)
  • 1 tbsp tomato ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Freshly cracked black pepper, to taste
  • Cheese (cheddar or mozzarella), grated, amount optional to taste
  • Fresh herbs (thyme, rosemary, parsley), finely chopped, about 1 tbsp total
  • Chili flakes, to taste (optional)

Puff Pastry & Glaze

  • 2 sheets puff pastry, thawed if frozen
  • 1 egg
  • 1 tbsp milk

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (392°F). Line a baking tray with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Filling: In a large bowl, combine the pork mince with the French onion soup mix (or sautéed onions and onion powder), tomato ketchup, Worcestershire sauce, Dijon mustard, and freshly cracked black pepper. Mix everything thoroughly until well incorporated. Optionally, add grated cheese, fresh herbs, and chili flakes to the mixture for added flavor.
  3. Assemble Rolls: On a clean surface, roll out the puff pastry sheets if needed and cut each sheet in half lengthwise to create four strips. Place a generous portion of the filling along one edge of each strip. Carefully roll the pastry over the filling, sealing the edges by pressing them together using a little water or egg wash to ensure the rolls don’t open during baking.
  4. Apply Egg Wash: In a small bowl, beat the egg with the milk. Using a pastry brush, generously brush the egg wash over the surface of each sausage roll. This will help them develop a beautiful golden-brown and glossy finish when baked.
  5. Bake: Arrange the prepared sausage rolls on the lined baking tray, leaving space between each. Bake in the preheated oven for 20 to 25 minutes, or until they are puffed up, golden brown, and the pork is fully cooked through.
  6. Cool & Serve: Remove the rolls from the oven and allow them to rest for a few minutes to set. Slice if needed and serve warm, accompanied by your favorite dips or sides for a delicious snack or appetizer.

Notes

  • For a vegetarian version, substitute pork mince with plant-based mince and use vegetarian French onion soup mix.
  • The French onion soup mix can be replaced with fresh sautéed onions combined with onion powder for a fresher taste.
  • The cheese and herbs are optional but add an extra layer of flavor to the filling.
  • To store, keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
  • Freezing raw rolls before baking is possible; freeze on a tray first then transfer to a container. Bake from frozen adding a few extra minutes to cooking time.
