  • 2 tablespoons Everything But The Bagel seasoning

Instructions

  1. Dry Chickpeas: Layout dry towels and put the rinsed chickpeas on them to dry. If your chickpeas still have the white skins on them, roll them around to help remove them. Pulling them off will give you crispier chickpeas. Allow the chickpeas to fully dry for a few hours; the drier they get, the crispier your roasted chickpeas will turn out.
  2. Preheat Oven: Preheat the oven to 425°F (220°C) to prepare for roasting.
  3. Season Chickpeas: Toss the dried chickpeas in olive oil and Everything Bagel seasoning until evenly coated. Then lay them in a single layer on a baking sheet to ensure even roasting.
  4. Initial Roast: Roast the chickpeas in the preheated oven for 25 minutes to start crisping them up.
  5. Toss and Continue Roasting: Remove the tray, toss the chickpeas to redistribute them, and place them back in the oven. Continue roasting for another 10-20 minutes, checking frequently after 10 minutes to remove any chickpeas that are getting too dark or burnt.
  6. Cool and Serve: Remove the chickpeas from the oven once evenly roasted and allow them to cool completely on the baking sheet. Cooling helps them crisp up further before serving.
