Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F. Spray the bottom and sides of two non-stick metal loaf pans (either 9 x 5 or 8 x 4 inches) with baking spray or grease with butter and lightly flour them to prevent sticking.
  2. Cream Peanut Butter, Butter, and Vanilla: Using an electric mixer, cream together the smooth peanut butter, softened butter, and vanilla extract for about 2 minutes until the mixture is light and fluffy.
  3. Add Sugars: Add both granulated sugar and light brown sugar to the creamed mixture. Beat on medium-high speed for 2 minutes until fully combined and smooth.
  4. Incorporate Eggs: Add eggs one at a time, mixing well after each addition. Increase the mixer speed and beat for an additional 30 seconds until the batter turns a light beige color. Remember to stop and scrape the sides of the bowl periodically for even mixing.
  5. Add Flour and Yogurt Alternately: Reduce the mixer speed and gradually add the self-rising flour alternately with the Greek yogurt, starting and ending with the flour. Beat just until everything is combined, making sure to scrape the bottom and sides of the bowl to incorporate all ingredients evenly.
  6. Fold in Bananas and Reese’s: Gently fold in the mashed bananas and chopped Reese’s peanut butter cups by hand until they are fully incorporated into the batter.
  7. Divide Batter: Use a measuring cup or spatula to divide the batter evenly between the two prepared loaf pans.
  8. Bake and Monitor: Bake the loaves for 35 minutes, then check the tops for browning. If they are browning too quickly, tent the pans loosely with foil to prevent burning.
  9. Continue Baking: Bake for an additional 15 to 20 minutes, or until a toothpick inserted into the center of the bread comes out clean, indicating that the bread is fully baked.
  10. Cool: Allow the loaves to cool in the pans for 15 minutes. Then remove them from the pans and place on a cooling rack to cool completely before slicing and serving.

Notes

  • Using self-rising flour eliminates the need for additional leavening agents, but if you don’t have self-rising flour, you can substitute all-purpose flour with baking powder and salt added.
