  • 1 bag (10 ounces) mini marshmallows
  • ¼ cup (31 g) confectioners’ sugar

Instructions

  1. Prepare Cereal: Place the Rice Chex cereal in a large mixing bowl and set it aside while preparing the marshmallow mixture.
  2. Melt Chocolate Mixture: In a medium microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring thoroughly between each until the mixture is fully melted and smooth.
  3. Add Marshmallows: Stir in the mini marshmallows to the melted mixture. Return to the microwave and heat again in 30-second intervals, stirring until the marshmallows puff up and begin to melt, resulting in a thick and creamy mixture.
  4. Combine with Cereal: Pour the marshmallow-chocolate mixture over the Rice Chex cereal. Stir well to coat all of the cereal pieces evenly and thoroughly.
  5. Press Into Pan: Transfer the coated cereal mixture into a greased 9×13 inch baking pan. Press the mixture firmly and evenly into the pan to form a compact layer.
  6. Chill Bars: Place the pan in the refrigerator and chill for 10-15 minutes to allow the bars to firm up.
  7. Add Finishing Touch: Lightly dust the top of the chilled bars with confectioners’ sugar, then cut into squares and serve.
