4.6 from 116 reviews

Pepperoni Pizzadillas are a delicious fusion of pizza and quesadillas, made with crispy flour tortillas filled with melted mozzarella cheese, savory pepperoni, and a zesty pizza sauce. Perfect as a quick snack or casual meal, these pizzadillas combine the best of both worlds with a crispy exterior and gooey, flavorful filling.

Ingredients

Scale

Base

  • 2 large flour tortillas

Cheese

  • 1 cup shredded mozzarella cheese

Sauce & Toppings

  • 3 tbsp pizza sauce
  • 6 slices of pepperoni
  • 1 tbsp sliced black olives (optional)

Instructions

  1. Heat the pan: Heat a large pan over medium heat to prepare for cooking the tortilla base.
  2. Cook first tortilla with cheese: Place one tortilla in the heated pan and sprinkle half a cup of shredded mozzarella cheese evenly over it.
  3. Top and cook both sides: Place the second tortilla on top of the cheesy layer and cook until golden brown on both sides and the cheese is melted, about 2-4 minutes per side. This creates a crispy base and melts the cheese inside.
  4. Add sauce and toppings: Spread the pizza sauce evenly over the top tortilla, then add the remaining cheese, pepperoni slices, and black olives if using.
  5. Bake to finish: Transfer the assembled pizzadilla to an oven preheated to 400°F (200°C) and bake for 5-10 minutes or until the cheese on top is melted and bubbly. Remove from oven, slice, and serve warm.

Notes

  • You can substitute the pepperoni with other favorite pizza toppings like mushrooms or bell peppers.
  • Use a non-stick pan for easier flipping and to prevent sticking.
  • Optional olives add a briny flavor, but can be left out if preferred.
  • Make sure to watch the pizzadilla carefully during baking to avoid burning the tortillas.
  • For a crispier crust, consider using a cast iron skillet for the initial stovetop cooking step.
