Base
- 2/3 cup peanut butter
- 3/4 cup old fashioned (rolled) oats
- 2 tbsp maple syrup
Topping
- 1/2 cup peanut butter
- 3 tbsp protein powder
Chocolate Coating
- 1 cup chocolate chips (melted)
- 2 tsp oil (for melting chocolate)
- Flakey sea salt (optional)
- Mix peanut butter and maple syrup: In a medium bowl, thoroughly combine 2/3 cup peanut butter and 2 tablespoons of maple syrup until smooth and well blended.
- Add oats: Stir in 3/4 cup old fashioned rolled oats into the peanut butter mixture until all oats are evenly coated and the mixture holds together.
- Form base in molds: Using a cookie scoop or spoon, divide about 2 tablespoons of the oat mixture into each cavity of silicone molds. Press down firmly with the back of a spoon to create an even, compact base layer.
- Prepare and add topping: In a separate bowl, mix the 1/2 cup peanut butter with 3 tablespoons protein powder until smooth. Spread or dollop this mixture evenly over each oat base. Alternatively, add a plain dollop of peanut butter if preferred. Place the molds in the freezer for 20 minutes to set.
- Melt chocolate: While the cups freeze, melt 1 cup of chocolate chips with 2 teaspoons of oil in the microwave. Heat in 30-second increments, stirring well after each interval until completely smooth.
- Add chocolate layer: Remove the oat cups from the freezer and spoon melted chocolate onto the top of each cup, covering the peanut butter layer. Return to the freezer for an additional 20 minutes to harden the chocolate.
- Serve: Pop the cups out of the silicone liners once fully set. Sprinkle lightly with flakey sea salt if desired and enjoy immediately or store chilled for later snacking.
