Instructions

  1. Prepare the baking sheet: Line a baking sheet with wax paper or a silicone baking mat to prevent sticking and make cleanup easier.
  2. Mix frozen yogurt base: In a small bowl, combine 1 cup plain Greek yogurt, ½ cup creamy peanut butter, 1 tablespoon maple syrup or honey, and 1 teaspoon vanilla extract. Stir until the mixture is smooth and uniform.
  3. Form the bars: Using a cupcake or ice cream scoop, dollop about half of the yogurt mixture into 4-6 mounds on the lined baking sheet. Press a popsicle stick into each mound, then scoop the remaining mixture on top of each. Use a small offset spatula to gently flatten the mounds, shaping them into bars.
