Ingredients

Scale

For the Casserole

  • 2 cups Pancake Mix (buttermilk pancake mix adds fluffiness)
  • 3 large Eggs (fresh eggs recommended)
  • 1 cup Milk (whole milk ideal)
  • 1 pound Breakfast Sausage (bulk or links)
  • 2 tablespoons Butter (for greasing the baking dish)
  • 1/2 cup Maple Syrup (pure maple syrup recommended)

For Serving

  • 2 cups Fresh Fruit (your choice, for serving)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a large baking dish with the butter to prevent sticking and ensure easy cleanup.
  2. Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until it is browned and cooked through, approximately 5–7 minutes. Drain any excess grease if desired.
  3. Mix Batter: In a mixing bowl, combine the pancake mix, milk, and eggs. Stir the mixture until just combined, taking care not to overmix to maintain fluffiness.
  4. Incorporate Ingredients: Fold half of the cooked sausage and half of the maple syrup into the pancake batter gently to distribute flavor evenly.
  5. Layer Casserole: Pour half of the pancake batter mixture into the greased baking dish, then layer the remaining sausage over the batter. Pour the remaining pancake mixture on top to cover the sausage.
  6. Bake: Bake the assembled casserole uncovered in the oven for 30–35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  7. Cool and Serve: Allow the casserole to cool for 5–10 minutes before serving. Serve warm with fresh fruit and additional maple syrup as desired.

Notes

  • Use buttermilk pancake mix for extra fluffy texture.
  • You can use sausage links cut into pieces or bulk sausage according to preference.
  • Feel free to substitute whole milk with a milk alternative if preferred.
  • Leftovers can be stored in the refrigerator and reheated in the oven or microwave.
  • Fresh fruit on the side adds a refreshing balance to the rich casserole.
