Ingredients
- 12 oz penne pasta
- 4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese (optional)
- Combine ingredients: Add the penne pasta, vegetable broth, halved cherry tomatoes, sliced zucchini, and diced bell pepper to a large pot.
- Season and boil: Sprinkle the Italian seasoning over the ingredients in the pot. Bring the mixture to a boil over medium-high heat.
- Simmer until cooked: Reduce the heat to a simmer and cook, uncovered, stirring occasionally, until the pasta is al dente and the liquid has been absorbed, about 12-15 minutes.
- Add Parmesan and serve: Stir in the grated Parmesan cheese if using, allowing it to melt and combine. Serve the pasta warm.
Notes
- You can omit the Parmesan or use a vegetarian-friendly cheese alternative to keep the dish vegetarian.
- Feel free to swap the vegetables with your favorites or whatever you have on hand, such as spinach, mushrooms, or peas.
- If you prefer a creamier texture, stir in a splash of cream or plant-based milk after cooking.
- Be sure to stir occasionally while simmering to prevent the pasta from sticking to the bottom of the pot.
