Ingredients

Scale

Vegetables and Herbs

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 cups fresh spinach

Main Ingredients

  • 1 tablespoon olive oil
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream

Seasoning and Garnish

  • Salt, to taste
  • Black pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté approximately 5 minutes until vegetables are softened and fragrant.
  2. Add Garlic: Stir in minced garlic and cook for an additional minute until you can smell its aroma.
  3. Combine Herbs and Broth: Add dried thyme and basil to the pot, then pour in the chicken broth. Increase heat to bring the soup to a boil.
  4. Cook Chicken and Gnocchi: Once boiling, reduce heat to a simmer and add shredded chicken along with gnocchi. Let cook for 5-7 minutes or until gnocchi float to the surface and become tender.
  5. Add Spinach and Cream: Stir in fresh spinach and heavy cream. Allow the soup to cook for another 2-3 minutes until spinach is wilted and soup is heated through. Season with salt and black pepper to taste.
  6. Serve: Ladle soup into bowls and garnish with grated Parmesan cheese if desired. Serve hot for best flavor.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version.
  • For a thicker soup, simmer a few minutes longer after adding the cream.
  • Fresh herbs can be used instead of dried for a brighter flavor; use about 1 tablespoon each.
  • Leftover soup stores well in the refrigerator for up to 3 days.
  • Add crushed red pepper flakes for a spicy kick.
