4.7 from 26 reviews

Experience the delicate, buttery flavor of Nobu’s famous Miso-Marinated Black Cod, a Japanese-inspired dish featuring tender black cod fillets marinated in a rich, umami-packed miso marinade. This easy-to-make recipe balances sweet mirin and savory miso for a perfectly caramelized, flaky fish that’s both elegant and comforting.

Ingredients

Scale

For the Miso Marinade

  • ¼ cup white miso paste
  • ¼ cup mirin
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons sake (optional, can be substituted with water)

For the Black Cod

  • 4 black cod fillets (about 6 oz each), skin-on
  • Fresh lemon wedges (optional, for serving)
  • Chopped green onions (optional, for garnish)

Instructions

  1. Mix Marinade Ingredients: In a small bowl, whisk together white miso paste, mirin, rice vinegar, sugar, soy sauce, and sake (if using) until the sugar dissolves completely and the mixture is smooth.
  2. Coat the Fish: Place the black cod fillets in a shallow dish or resealable plastic bag. Pour the miso marinade over the fish making sure each fillet is fully coated with the marinade.
  3. Marinate: Cover the dish with plastic wrap or seal the bag and refrigerate for at least 30 minutes to 1 hour. The longer you marinate, the richer and deeper the flavor will become.
  4. Preheat the Broiler: Set your oven broiler to high and position the rack about 6 inches from the heat source for optimal caramelization.
  5. Broil the Fish: Arrange the marinated fillets on a baking sheet lined with parchment paper or foil. Broil for 10-12 minutes until the fish turns golden brown on top and flakes easily with a fork.
  6. Optional Caramelization: If you want a more pronounced caramelized crust, broil for an additional 1-2 minutes but watch carefully to prevent burning.
  7. Serve and Garnish: Transfer the cooked cod to serving plates. Garnish with fresh lemon wedges and chopped green onions to add brightness and a touch of freshness.

Notes

  • Use skin-on black cod fillets for best flavor and texture.
  • If sake is unavailable, substitute with water or omit entirely.
  • Do not marinate the fish for more than 1 hour as the miso can overpower the delicate flavor.
  • For a gluten-free version, use tamari instead of soy sauce.
  • Broiling times may vary depending on your oven; keep a close watch during the last minutes to avoid burning.
  • Marinate the fish overnight for an even deeper flavor punch, but be cautious as the texture may change slightly.
