Truffle Base
- 150g golden Oreo cookies (or plain / gluten-free biscuits)
- 60g vegan / dairy-free cream cheese
- 200g dairy-free white chocolate
Decorations
- Black food gel
- Orange food gel
- Strawberry laces / candy pencils (for the scarf)
- Prepare the tray: Line a baking tray with greaseproof paper and set aside for later use.
- Crush the cookies: Place the cookies in a food processor or blender and blend until crumb-like. Alternatively, crush them with a rolling pin if you do not have an electric mixer.
- Mix the truffle base: Transfer the cookie crumbs to a large mixing bowl, then add the dairy-free cream cheese. Mix thoroughly until the mixture is sticky and holds its shape when squeezed into balls.
- Shape the snowmen: Using clean hands, weigh out 20g of the mixture and roll into a ball. Roll 7g into a smaller ball and place on top of the larger one to form a snowman shape. Repeat to form all truffles and place them on the lined tray.
- Freeze the truffles: Place the tray in the freezer for about 20 minutes or until the truffles are firm to the touch.
- Melt the white chocolate: About 5 minutes before the truffles are ready, melt the white chocolate using a bain-marie or microwave until smooth and fully melted.
- Coat the truffles: Remove the truffles from the freezer and dip each one into the melted white chocolate. Either insert a toothpick for dipping or balance on a fork and drizzle chocolate over. Let excess chocolate drip off. Apply a second coat if desired for a thicker shell.
- Set the chocolate coating: Place the coated truffles back onto the lined tray and return them to the freezer for 5-10 minutes until the chocolate sets quickly due to the cold truffles.
- Prepare decorations: Color some leftover white chocolate with black and orange food gels. Transfer each colored chocolate into a piping bag and snip off the tip for detailed decoration.
- Decorate the snowmen: Pipe an orange carrot nose, black eyes, mouth, and buttons onto each truffle using the colored chocolate.
- Add scarves: Cut the strawberry lace sweets to appropriate size and wrap around the snowmen’s necks. Optionally, use a little melted white chocolate to secure the scarves in place.
- Final setting: Place the decorated truffles back into the freezer for 5 minutes to set all the decorations firmly.
