Truffle Base

  • 4 ounces Cream Cheese (Softened)
  • 1/2 cup Unsalted Butter (Softened)
  • 2 cups Powdered Sugar
  • 1 teaspoon Peppermint Extract
  • 1 drop Green Food Coloring Gel
  • 1/2 cup Mini Semisweet Chocolate Chips

Coating

  • 12 ounces Ghirardelli Melting Chocolate (Melted – use dark, white, or both as preferred)

Instructions

  1. Prepare the base: Beat the softened cream cheese and unsalted butter together until the mixture is creamy and smooth. This creates a rich, velvety foundation for your truffles.
  2. Add flavor and sweetness: Gradually add the powdered sugar, peppermint extract, and a drop of green food coloring gel. Beat the mixture until everything is thoroughly combined and the color is evenly distributed.
  3. Incorporate chocolate chips: Gently fold in the mini semisweet chocolate chips to add texture and bursts of chocolate flavor in every bite.
  4. Form truffle balls: Using a 1 tablespoon scoop, drop dollops of the mixture onto a parchment paper–lined baking sheet. Freeze these for about an hour to make them firm and easier to handle.
  5. Dip in melted chocolate: With a toothpick, pick up each chilled truffle and dip it into the melted Ghirardelli chocolate, making sure to coat it completely. Tap the side of the bowl to remove any excess chocolate.
  6. Garnish and set: If desired, add a few mini chocolate chips on top of the dipped truffle for decoration. Place the finished truffles back on the parchment paper to allow the chocolate coating to set.
  7. Store properly: Keep the truffles refrigerated in an airtight container. They will stay fresh for up to a week.
