Ingredients

Scale

Dry Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Blondie Batter

  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt

Apple Filling

  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Maple Glaze

  • 2 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line an 11×7 inch pan with tin foil or spray it with cooking spray to prevent sticking.
  2. Prepare Apple Filling: In a skillet over medium-low heat, combine chopped apples, 2 tablespoons brown sugar, 1 tablespoon butter, 1/2 teaspoon vanilla extract, and 1/2 teaspoon cinnamon. Cook for 3-4 minutes until apples are tender. Remove from heat and let cool.
  3. Make Blondie Batter: In a large bowl, cream 1 cup softened butter until light and fluffy, about 1 minute. Add 1/4 cup granulated sugar and 1 cup dark brown sugar, mixing well to combine.
  4. Add Eggs and Flavor: Beat in eggs one at a time, making sure each is fully incorporated before adding the next. Then add 1 1/2 teaspoons vanilla extract and 1/2 teaspoon salt, mixing until combined.
  5. Combine Dry Ingredients: In a separate bowl, whisk together 2 cups flour, 1 teaspoon baking powder, and 1/2 teaspoon cinnamon. Gradually stir this into the wet mixture until just combined, careful not to overmix.
  6. Assemble Blondies: Spread about half of the blondie batter evenly in the prepared pan using a spatula or your hands. Spoon and spread the cooled apple filling evenly over the batter. Top with the remaining blondie batter, spreading it evenly to cover the apple layer.
  7. Bake: Place in the oven and bake for 25-30 minutes, or until the top is golden brown and a cake tester inserted into the center comes out clean.
  8. Prepare Maple Glaze: While the blondies bake, melt 2 tablespoons butter in a small saucepan over low heat. Add 1/4 cup maple syrup, 1/4 teaspoon vanilla extract, and 1/8 teaspoon ground cinnamon. Remove from heat and sift in 1/2 cup powdered sugar, whisking until smooth. Allow the glaze to cool for 8-10 minutes so it thickens slightly.
  9. Glaze and Cool: When blondies are done, let them cool for about 10 minutes in the pan. Then pour the maple glaze evenly over the top and allow it to set before slicing and serving.

Notes

  • Use tart apple varieties like Granny Smith for a nice balance of sweetness and acidity in the filling.
  • Make sure to let the apple filling cool before spreading it on the blondie batter to prevent melting or mixing of layers.
  • For best results, allow the glaze to cool and thicken slightly before pouring it on the blondies.
  • Store blondies in an airtight container at room temperature for up to 3 days, or refrigerate to keep fresh longer.
  • These blondies can be gently reheated in a microwave or oven before serving if desired.
