Ingredients

Scale

Meatloaf

  • 2 pounds Ground Chicken or lean pork/turkey
  • 1 cup Parmesan Cheese, shredded
  • 1 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk (or plant-based milk)

Glaze

  • 2 tablespoons Unsalted Butter
  • 4 cloves Minced Garlic (used in glaze, but total garlic is 4 cloves, clarify as 4 cloves minced garlic total)
  • 1/4 cup Additional Parmesan
  • 2 tablespoons Fresh Parsley

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or grease a loaf pan to prevent sticking and ensure easy cleanup.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, 1 cup shredded Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and milk. Mix gently until just combined to keep the meatloaf tender.
  3. Shape Meatloaf: Form the mixture into a loaf shape and place it onto the prepared baking sheet or into the greased loaf pan.
  4. Bake: Bake the meatloaf for 40 to 45 minutes until the internal temperature reaches 74°C (165°F), ensuring it is fully cooked and juicy.
  5. Prepare Glaze: While the meatloaf bakes, melt the unsalted butter in a saucepan over medium heat. Add the minced garlic and cook until fragrant. Stir in the additional 1/4 cup Parmesan cheese and fresh parsley until the mixture slightly thickens into a glaze.
  6. Glaze Meatloaf: Brush the prepared garlic Parmesan glaze over the meatloaf and return it to the oven. Bake for an additional 5 to 7 minutes to set the glaze and enhance the flavor.
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5 minutes. Slice and garnish with fresh parsley before serving to add a fresh, herbaceous finish.

Notes

  • Use ground chicken, turkey, or lean pork depending on your preference for a leaner or richer meatloaf.
  • Panko breadcrumbs help keep the meatloaf light and airy.
  • Ensure not to overmix the ingredients to maintain a juicy texture.
  • The glaze can be made with plant-based butter and milk for a dairy-free option.
  • Letting the meatloaf rest helps retain juices and makes slicing easier.
  • Check internal temperature with a meat thermometer for best food safety and doneness.
