  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Prepare the Peach Glaze: In a medium bowl, combine the peach preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix thoroughly until all ingredients are well incorporated. Set the glaze aside for later use.
  2. Season the Chicken: Pat the chicken thighs dry with paper towels. In a small bowl, mix together kosher salt, black pepper, and chili powder. Rub this seasoning evenly over both sides of the chicken thighs to ensure they are well seasoned.
  3. Cook the Chicken: Heat 2 tablespoons of extra virgin olive oil in a large nonstick skillet over medium heat. Once the oil is hot, add the chicken thighs. Depending on the skillet size, you may need to cook in batches to avoid overcrowding. Cook the chicken on one side for 5 minutes until browned.
  4. Flip and Finish Cooking Chicken: Turn the chicken thighs over, reduce the heat to medium-low, and cook for an additional 5 minutes or until the internal temperature reaches 165°F (74°C). Once cooked, remove the chicken from the skillet and place on a plate. Tent with foil to keep warm.
  5. Sauté Jalapenos and Peaches: Raise the heat back to medium, add the thinly sliced jalapeno peppers to the skillet, and cook for 3 minutes to slightly soften and release their flavors. Then add the sliced peaches and cook for another 3 minutes until the peaches soften slightly but still hold their shape.
  6. Add the Peach Glaze: Pour the prepared peach glaze into the skillet with the jalapenos and peaches. Stir gently to coat the peaches and jalapenos evenly with the glaze, creating a delicious sauce.
  7. Combine Chicken and Glaze: Return the cooked chicken thighs back into the skillet. Spoon the glaze over the top of the chicken evenly. Cook for another 1-2 minutes on medium heat to warm the chicken through and allow the flavors to meld together.
