Instructions

  1. Cook the Eggs: Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium-high heat. Once boiling, turn off the heat, cover the pan, and let the eggs sit for 10 to 12 minutes to finish cooking.
  2. Peel and Chop Eggs: Drain the hot water and run cold water over the eggs to cool them down. Peel the eggs carefully, then chop them into small pieces.
  3. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Stir until smooth and well blended.
  4. Combine Eggs with Base: Add the chopped eggs to the mixture and stir until the eggs are evenly coated with the seasoned mayonnaise.
  5. Add Cheese and Bacon: Mix in the shredded sharp cheddar cheese and half of the crumbled cooked bacon, stirring until combined.
