Instructions

  1. Prepare the rice: Cook the white rice according to package instructions to ensure it will be ready around the same time as the chicken.
  2. Season the chicken: In a large bowl, toss the diced chicken with 1 tablespoon of vegetable oil, garlic salt, black pepper, and red pepper flakes until well coated.
  3. Cook the chicken: Heat the remaining 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Transfer the cooked chicken to a plate and set aside.
  4. Sauté garlic and bell pepper: In the same skillet, add the minced garlic and diced red bell pepper. Cook over medium heat for 1–2 minutes until fragrant and slightly softened.
  5. Make the sauce: Stir in the honey and soy sauce. Allow the mixture to bubble and thicken into a glossy sauce.
  6. Combine chicken and sauce: Return the cooked chicken to the skillet and toss everything together until the chicken is fully coated in the honey pepper sauce.
  7. Serve: Spoon the honey pepper chicken over the cooked white rice. Top with chopped scallions for added freshness and serve immediately.
