Instructions

  1. Prepare Freeze-Dried Blueberries: Grind freeze-dried blueberries into a fine powder using a blender or food processor. This will add concentrated blueberry flavor throughout the bites.
  2. Mix Dry Ingredients: In a large bowl, combine rolled oats, vanilla protein powder, freeze-dried blueberry powder, and chia or flax seeds if using. Stir until evenly mixed.
  3. Mix Wet Ingredients: In a separate bowl, whisk together unsweetened applesauce (or mashed banana), softened cream cheese, and honey or maple syrup, blending well for smoothness.
  4. Combine & Mix: Add the wet ingredient mixture to the dry ingredients and mix thoroughly until fully incorporated into a sticky dough.
  5. Fold in Blueberries: Gently fold in the thawed and drained frozen blueberries, taking care not to crush them too much to retain bursts of blueberry flavor.
  6. Adjust Consistency: If the mixture feels too dry to roll, gradually add milk (1 tablespoon at a time) until the mixture holds together and can be shaped into balls.
  7. Roll Into Bites: Scoop out portions of the mixture and roll them into bite-sized balls. Place these on a parchment-lined plate or baking sheet.
