Peanut Butter Mixture
- 1 1/3 cup almond flour
- 1 cup natural peanut butter
- 1/4 tsp salt (only if peanut butter isn’t salted)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tsp coconut oil
- Mix Ingredients: In a large bowl, combine the almond flour, natural peanut butter, salt (if using), maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
- Form Balls: Take small portions of the mixture and roll them into bite-sized balls. Place the balls onto a tray and refrigerate for 30 minutes to firm up.
- Melt Chocolate: In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until the chocolate is fully melted and smooth.
- Dip Buckeyes: Using a fork, dip each chilled ball into the melted chocolate, coating about two-thirds of the ball. Lift the coated buckeye out, letting excess chocolate drip off, then place it back onto the tray.
- Chill: Once all buckeyes are dipped, place the tray in the refrigerator for at least 15 minutes to allow the chocolate to set completely.
- Store: Keep the buckeyes refrigerated until ready to serve. They are best enjoyed cold and can be stored for up to one week.
Notes
- If your peanut butter is already salted, omit the additional salt to avoid oversalting the mixture.
- Use natural peanut butter with no added sugar for a healthier version.
- Ensure the chocolate chips and coconut oil are melted gently to avoid burning the chocolate.
- Store buckeyes in an airtight container in the fridge to maintain freshness.
- You can substitute maple syrup with honey if preferred, although this will affect the flavor slightly.
