Ingredients

Scale

Meat and Vegetables

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Seasonings and Others

  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) and grease a large baking dish with olive oil to prepare it for baking and prevent sticking.
  2. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic and sauté for 3-4 minutes until the onion is translucent and fragrant.
  3. Cook the Ground Turkey: Add ground turkey to the skillet and cook for 5-7 minutes, breaking it apart with a spoon as it cooks until browned. Drain any excess fat from the pan.
  4. Add the Sweet Potatoes & Zucchini: Stir in the diced sweet potatoes, zucchinis, smoked paprika, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally until the vegetables start to soften.
  5. Transfer to Baking Dish: Transfer the cooked turkey and vegetable mixture to the prepared baking dish and spread it out evenly.
  6. Top with Cheese: Sprinkle the shredded cheddar or mozzarella cheese evenly over the top of the mixture.
  7. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the sweet potatoes are tender and the cheese is melted and bubbly.
  8. Garnish & Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving for added color and flavor.

Notes

  • You can substitute the zucchini with other vegetables like bell peppers or mushrooms if desired.
  • For a spicier kick, add a pinch of cayenne pepper or red chili flakes to the seasoning mix.
  • If you prefer a lower-fat option, use reduced-fat cheese or omit the cheese topping entirely.
  • This dish can be prepared ahead of time and reheated; store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Make sure to dice the sweet potatoes into small, uniform pieces to ensure even cooking during baking.
