Ingredients

Scale

Dough Ingredients

  • 1 cup (237 g) water, warmed (about 110°F-115°F)
  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar
  • ⅓ cup (75 g) olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 2½ cups (312.5 g) all-purpose flour

Toppings

  • 1½ cups (169.5 g) mozzarella cheese, divided
  • ½ cup (128.5 g) pizza sauce
  • ¼ cup pepperoni slices (approximately 25 slices)

Instructions

  1. Activate the Yeast: In a large bowl, combine the warm water, active dry yeast, and sugar. Let it rest for about 5 minutes until the yeast blooms and the mixture becomes foamy.
  2. Prepare the Oil Mixture: In a small bowl, whisk together the olive oil, minced garlic, kosher salt, and Italian seasoning until well combined.
  3. Combine Dough Ingredients: Pour half of the oil mixture into the yeast mixture, stirring to combine. Add the all-purpose flour to the wet ingredients and stir until a dough forms.
  4. Rise the Dough: Transfer the dough into a greased bowl and cover it with a clean towel. Allow it to rise in a warm place for about 1 hour or until it has doubled in size.
  5. Preheat the Oven: Preheat your oven to 450°F (232°C) while the dough is rising.
  6. Prepare the Baking Dish: Pour the reserved olive oil mixture into the bottom of a greased 9×11-inch baking dish. Use a pastry brush to spread the oil evenly across the bottom.
  7. Shape the Dough: Transfer the risen dough to the prepared baking dish. Work the dough out to the edges of the dish and use your fingers to create dimples throughout the surface.
  8. Bake the Dough: Place the baking dish in the preheated oven and bake the focaccia bread for 12 minutes until partially cooked.
  9. Add Toppings: Remove the focaccia from the oven carefully. Spread the pizza sauce evenly over the partially baked bread. Sprinkle 1 cup of mozzarella cheese over the sauce, add the pepperoni slices on top, then finish with the remaining ½ cup mozzarella cheese.
  10. Bake with Toppings: Return the focaccia pizza to the oven and bake for an additional 13-15 minutes, or until the cheese is melted, bubbly, and slightly golden.
  11. Serve: Remove from the oven and let cool slightly before slicing and serving your focaccia pepperoni pizza.

Notes

  • Make sure the water is not too hot when activating yeast to avoid killing the yeast.
  • The dimples in the dough help to hold the olive oil and toppings, enhancing flavor and texture.
  • You can add extra toppings such as sliced olives, bell peppers, or mushrooms if desired.
  • For a crispier base, bake the dough a few minutes longer before adding toppings.
  • This recipe works well with all-purpose flour but can be adapted for bread flour for a chewier texture.
