Fritters
- 1 cup edamame, frozen and thawed
- 1 handful spinach or cilantro
- ¼ cup chopped onion
- 2 eggs
- 1/3 cup heaping oat flour
- ¼ tsp baking powder
- ¼ tsp garlic powder
- 1 pinch curry powder
- ¼ tsp ground cumin
For Cooking
- 1–2 tablespoons vegetable oil (for sautéing and frying)
- Prepare Onion: Roughly chop the onion and sauté it in vegetable oil on low heat until soft and fragrant. Remove from heat and set aside.
- Blend Ingredients: Combine the edamame, spinach or cilantro, sautéed onion, eggs, oat flour, baking powder, garlic powder, curry powder, and ground cumin in a food processor or high-speed blender. Blend until a smooth and uniform paste forms.
- Heat Pan: Warm 1 to 2 tablespoons of vegetable oil in a non-stick pan over medium heat, ensuring the surface is evenly coated and hot.
- Form and Cook Fritters: Scoop or shape the batter into small patties using wet hands and place them carefully into the hot pan. Cook them like pancakes, frying each side until golden brown and cooked through, about 3-4 minutes per side.
