Ingredients

Scale

Protein and Meat

  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon

Vegetables

  • 5 cups broccoli florets
  • 1 pound thawed frozen spinach (well-drained)
  • 3 cloves minced garlic

Dairy & Dressings

  • 1 cup ranch dressing
  • 1 cup shredded mozzarella cheese (separated)
  • 1 cup shredded cheddar cheese (separated)

Instructions

  1. Preheat the oven: Set your oven to 375°F (191°C) to ensure it reaches the right temperature by the time your casserole is ready to bake.
  2. Prepare the vegetables: If using frozen spinach, thaw completely and squeeze out all excess water to avoid a soggy casserole. For fresh broccoli, briefly boil for 1–2 minutes until bright green, then drain and cool.
  3. Mix the casserole ingredients: In a large bowl, combine the cooked chicken, chopped bacon, prepared broccoli and spinach, minced garlic, ranch dressing, and half of both the shredded mozzarella and cheddar cheeses. Mix thoroughly to evenly distribute all ingredients. (Optionally, you can combine everything directly in the casserole dish to minimize clean-up.)
  4. Transfer to casserole dish: Spread the combined mixture evenly in a 9×13 inch (23×33 cm) casserole dish, smoothing out the top.
  5. Add cheese topping: Sprinkle the remaining shredded mozzarella and cheddar cheese evenly over the top of the casserole to create a golden, bubbly crust.
  6. Bake the casserole: Place the casserole in the preheated oven and bake for about 15 minutes, or until the cheese on top is hot, melted, and bubbling.
  7. Cool and serve: Remove the casserole from the oven, let it cool slightly for a few minutes to set, then serve warm and enjoy your low-carb meal!

Notes

  • To save time, you can use pre-cooked rotisserie chicken.
  • Drain spinach thoroughly to prevent excess moisture in the casserole.
  • Fresh broccoli can be steamed or blanched instead of boiled to retain nutrients.
  • Optional: Add ranch seasoning mix for extra flavor.
  • Leftovers store well in the refrigerator for up to 3 days.
  • Reheat in the oven or microwave until warmed through.
