A delightful and indulgent ice cream cake featuring rich homemade brownies layered with your favorite ice cream flavors and topped with warm fudge sauce. Perfect for celebrations or a special treat, this no-bake freezer cake combines the gooey texture of brownies with creamy ice cream for a refreshing dessert experience.

Ingredients

Scale

Brownie Layer

  • 1 box brownie mix (18.3 oz), prepared as instructed

Ice Cream Layer

  • 2 pints of your choice of ice cream flavors

Topping

  • 1 cup fudge sauce, heated
  • Pieces of leftover brownies for garnish

Instructions

  1. Prepare and Bake the Brownies: Begin by following the instructions on the brownie mix box to bake the brownies in a 9 x 13-inch pan. After baking, allow the brownies to cool completely in the pan to ensure they are firm enough for layering.
  2. Cut and Layer the Brownies and Ice Cream: Once cooled, use a sharp knife or cake ring to cut two 6-inch circles from the brownies. Place one brownie circle into the base of a 6-inch springform pan. Spread one pint of ice cream evenly over this brownie layer, smoothing as needed.
  3. Add the Second Brownie Layer and Ice Cream: Place the second brownie circle on top of the first ice cream layer inside the springform pan. Spread the remaining pint of ice cream evenly over the second brownie layer and smooth the surface as much as possible for a neat finish.
  4. Freeze and Set the Ice Cream Cake: Cover the assembled cake with plastic wrap to prevent freezer burn. Return the pan to the freezer and allow the ice cream cake to harden for at least a few hours or until firm enough to slice.
  5. Serve and Garnish: Remove the cake from the freezer about 5 minutes before serving to soften slightly. Carefully remove it from the springform pan and drizzle hot fudge sauce over the top. Finish with pieces of the leftover brownies for extra texture and flavor. Slice and enjoy your delicious brownie ice cream cake!

Notes

  • Make sure brownies are completely cooled before cutting to prevent crumbling.
  • Use ice cream that is slightly softened for easier spreading but not melted.
  • For best results, use a springform pan to easily remove the cake without damage.
  • You can swap fudge sauce for caramel or chocolate syrup as desired.
  • Leftover brownie pieces can be stored separately and used as garnish just before serving.
