Ingredients

Scale

Soup Base

  • 1 ½ lbs boneless skinless chicken breasts or thighs
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and pepper, to taste

Pasta and Cheese

  • 1 cup uncooked small pasta (like ditalini or elbow macaroni)
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Optional Ingredients

  • ½ cup heavy cream or half-and-half (optional, for extra creaminess)
  • Fresh basil or parsley, for garnish

Instructions

  1. Prepare Ingredients: Place the chicken, diced onion, minced garlic, crushed tomatoes, chicken broth, dried basil, dried oregano, crushed red pepper flakes (if using), salt, and pepper into the slow cooker.
  2. Cook Chicken and Soup: Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender and fully cooked through.
  3. Shred Chicken: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the soup base.
  4. Add Pasta: Stir in the uncooked small pasta and cook on high for another 15–20 minutes until the pasta is al dente.
  5. Add Cheeses and Cream: Stir in the grated Parmesan and shredded mozzarella cheeses until melted into the soup. If using, add the heavy cream or half-and-half at this point to create a silky finish.
  6. Serve: Ladle the soup into bowls and garnish with extra Parmesan, fresh basil or parsley, or garlic croutons for added texture and flavor.

Notes

  • You can substitute chicken thighs for breasts for a juicier, more flavorful soup.
  • For a spicier kick, increase the crushed red pepper flakes or add a dash of hot sauce.
  • If you prefer a thicker soup, reduce the amount of chicken broth slightly.
  • To save time, use pre-cooked shredded chicken and adjust the cooking time accordingly.
  • This soup freezes well; store leftovers in airtight containers for up to 3 months.
