Ranch Seasoning

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt

Spicy Seasoning

  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the chickpeas to a crispy texture.
  2. Drain and Rinse Chickpeas: Use a strainer to drain and rinse the chickpeas thoroughly under cold water to remove any canning liquid and excess salt.
  3. Dry Chickpeas: Lay the rinsed chickpeas on a kitchen towel and pat them dry, discarding any loose skins that fall off. Let them air dry completely to ensure crispiness during roasting.
  4. Prepare Baking Sheet: Line a rimmed baking sheet with a silicone baking mat or parchment paper. If using parchment, lightly spray the sheet with cooking oil like avocado oil to prevent sticking.
  5. Spread Chickpeas: Evenly spread the dried chickpeas over the baking sheet in a single layer for uniform roasting.
  6. Roast Chickpeas: Roast in the oven for 20-30 minutes, stirring every 10 minutes until the chickpeas are golden brown and crispy.
  7. Make Spice Mixes: While the chickpeas roast, combine the ingredients for the sweet, ranch, and spicy seasoning blends in separate small bowls and set aside.
