Instructions

  1. Bloom the Gelatin: In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes until it becomes soft and slightly thickened, preparing it for melting into the cream mixture.
  2. Heat the Cream & Coffee: In a small saucepan, combine the heavy cream, whole milk, sugar, and instant espresso powder. Warm the mixture over medium heat, whisking until the sugar fully dissolves and the coffee flavor is evenly incorporated. Be careful not to let the mixture boil; it should be just heated through.
  3. Add the Gelatin & Vanilla: Remove the saucepan from heat and whisk in the bloomed gelatin until completely dissolved. Stir in the vanilla extract to enhance the flavor.
  4. Pour into Ramekins & Chill: For extra smoothness, strain the mixture through a fine sieve. Then, pour the liquid evenly into ramekins. Cover each ramekin with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the panna cotta is set and firm.
  5. Serve & Enjoy: To serve, gently dip the bottoms of the ramekins in warm water for a few seconds to loosen the panna cotta. Invert onto dessert plates. Garnish with whipped cream and chocolate shavings if desired for an elegant presentation.
