Ingredients

Scale

Vegetables

  • 1 medium head of cauliflower (about 11.5 pounds), cut into small florets
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Dairy

  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk or heavy cream

Liquids

  • 4 cups low-sodium vegetable broth

Seasonings

  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Prepare the cauliflower: Wash the cauliflower thoroughly and cut it into small, bite-sized florets to ensure even cooking.
  2. Sauté the aromatics: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
  3. Cook the cauliflower: Add the cauliflower florets to the pot along with 4 cups of low-sodium vegetable broth. Bring the mixture to a simmer, cover, and cook until the cauliflower is fork-tender, approximately 20 minutes.
  4. Blend the soup: Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and puree until smooth, then return it to the pot.
  5. Add dairy and cheese: Stir in 1 cup of whole milk or heavy cream to the blended soup. Gradually add 2 cups of shredded sharp cheddar cheese, stirring until fully melted and incorporated, creating a rich and creamy texture.
  6. Season and serve: Taste the soup and season with salt and freshly ground black pepper according to your preference. Serve hot, optionally garnished with extra shredded cheese or fresh herbs.

Notes

  • You can substitute the vegetable broth with chicken broth for a richer flavor.
  • For a lower-fat version, use low-fat milk instead of whole milk or heavy cream.
  • If you prefer a chunkier texture, reserve some cooked cauliflower florets before blending and stir them back in at the end.
  • This soup can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stove, adding a splash of milk if the soup thickens too much.
