Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Filo Sheets: Lay the thawed filo pastry sheets flat on a work surface. Cut each sheet into nine squares by dividing into thirds lengthwise and halves widthwise, resulting in a total of 36 squares. Keep the unused sheets covered with a damp towel to prevent drying out.
  3. Assemble Crackers: Take one filo square and brush it evenly with melted butter. Place a slice of brie, about one teaspoon of cranberry sauce, and a teaspoon of flaked almonds at one end of the square. Roll the pastry tightly around the fillings into a small cylindrical shape, then pinch both ends to seal and form a cracker shape. Repeat this process with all remaining squares.
  4. Prepare for Baking: Arrange the assembled filo crackers on the lined baking trays. Brush the tops generously with the remaining melted butter to achieve a golden finish when baked. Sprinkle black sesame seeds evenly over the crackers for added flavor and texture.
  5. Bake: Place the trays in the oven and bake the crackers for 15 to 20 minutes, or until the filo pastry is crisp and turns a beautiful golden brown color.
