Ingredients

Scale

For the Mushrooms

  • 12 large white or cremini mushrooms, stems removed

For the Crab Filling

  • 8 ounces crab meat (fresh, canned, or imitation)
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (Panko works well)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Old Bay seasoning (optional)
  • 1/4 cup green onions, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the perfect temperature while you prepare the mushrooms and filling.
  2. Clean the Mushrooms: Gently wipe the mushrooms with a damp cloth to remove any dirt. Carefully remove the stems from the mushroom caps and set the caps aside for stuffing.
  3. Make the Filling: In a medium bowl, combine the crab meat, softened cream cheese, grated Parmesan cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, Old Bay seasoning if using, chopped green onions, fresh parsley, salt, and pepper. Mix everything thoroughly until fully incorporated and smooth.
  4. Taste and Adjust: Taste the crab filling mixture and adjust the seasoning with additional salt, pepper, or Old Bay seasoning as desired to balance the flavors.
  5. Stuff the Mushrooms: Using a spoon or your hands, generously fill each mushroom cap with the crab filling. Press the filling down gently to pack it into the cap evenly.
  6. Drizzle with Olive Oil: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle a little olive oil lightly over the tops of the stuffed mushrooms to add moisture and enhance flavor during baking.
  7. Bake the Mushrooms: Place the baking sheet in the preheated oven. Bake for 15-20 minutes or until the mushrooms are tender, and the tops of the crab filling turn golden brown and slightly crispy.
  8. Cool Slightly: Remove the stuffed mushrooms from the oven and let them cool for a few minutes to set before serving, allowing the flavors to meld and the filling to firm up.

Notes

  • For best results, use fresh crab meat if available, but canned or imitation crab also works well.
  • If you prefer a bit more texture, you can toast the breadcrumbs lightly before mixing them into the filling.
  • Old Bay seasoning adds a classic seafood spice, but you can omit it for a milder flavor or substitute with paprika and cayenne.
  • These stuffed mushrooms can be prepared ahead of time and baked just before serving.
  • For a lower-fat version, substitute cream cheese with light cream cheese and use low-fat mayonnaise.
  • To make the mushrooms gluten-free, use gluten-free breadcrumbs or crushed gluten-free crackers.
