  • 1 tbsp milk (extra if needed)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a 9×9 inch baking dish by greasing it or lining it with parchment paper to ensure easy removal of the cake after baking.
  2. Mix Batter: In a mixing bowl, beat 1 egg thoroughly. Add sugar, milk, salt, oil, and vanilla extract to the egg and mix until well combined and smooth.
  3. Add Dry Ingredients: Spoon the flour into a measuring cup and level it off. Dump the flour on top of the wet batter in the bowl. Sprinkle baking powder evenly over the flour, then gently mix it into the top half of the flour. Stir the flour mixture into the batter until just combined. Avoid overmixing to keep the cake tender.
  4. Pour Batter into Pan: Transfer the batter into the prepared baking dish, spreading it evenly for uniform baking.
  5. Prepare Streusel Topping: In a microwave-safe bowl, melt 2 tablespoons of butter. Remove from microwave and mix in brown sugar, cinnamon, and 2 tablespoons of flour until well combined. If desired, fold in chopped walnuts for added texture and flavor.
  6. Apply Streusel: Sprinkle the streusel mixture evenly over the cake batter. Using your finger or the small end of a wooden spoon, gently poke the streusel about halfway down into the batter randomly 12 to 18 times to create pockets of cinnamon sugar within the cake.
