Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside. Make sure there is enough space in the freezer for the baking sheet later.
  2. Make Raspberry Chia Jam: In a bowl, mash the raspberries with a fork until mostly smooth. Mix in the chia seeds and maple syrup (or honey) until well combined. Let the mixture sit for 5-10 minutes to thicken.
  3. Freeze Jam Clusters: Scoop about 2 tablespoons of the chia jam onto the prepared baking sheet, spacing each dollop about 2 inches apart. Place the baking sheet in the freezer and freeze for 1 hour or until the clusters are fully solid.
  4. Melt Chocolate Coating: In a medium bowl, melt the dark chocolate chips along with the coconut oil in the microwave in 30-second increments. Stir thoroughly between each increment to prevent burning and achieve a smooth consistency.
  5. Dip Jam Bites: Working quickly, dip each frozen jam cluster into the melted chocolate ensuring it is fully coated. Transfer the coated clusters back onto the parchment-lined baking sheet. Sprinkle a pinch of sea salt over each one.
  6. Set Chocolate: Place the baking sheet back in the freezer for 10 minutes or until the chocolate coating has completely set.
