Ganache Ingredients

  • 250g milk chocolate
  • 75 ml heavy cream
  • 2 tablespoons coffee liqueur (Kahlua)
  • 1 tablespoon instant coffee granules

Coating Ingredients

  • 200g chocolate (milk, dark, or white) for coating
  • Cocoa powder, optional for dusting

Instructions

  1. Prepare the Loaf Tin: Line a 900g (2lb) loaf tin with parchment paper to prevent sticking and make removal of the ganache easier once set.
  2. Make the Ganache: Break the 250g milk chocolate into small pieces and set aside. In a small saucepan over low heat, warm 75 ml heavy cream with 2 tablespoons coffee liqueur and 1 tablespoon instant coffee granules. Stir continuously until the coffee dissolves and small bubbles form around the edges. Remove from heat, add the chocolate pieces, and stir until fully melted and smooth.
  3. Set the Ganache: Pour the smooth ganache into the lined loaf tin. Allow it to cool to room temperature, then chill in the refrigerator for 2 to 4 hours until firm.
  4. Form the Truffles: Remove the firm ganache from the tin and cut into 24 equal pieces. Roll each piece between your hands to form smooth balls. Place them on a parchment-lined tray and refrigerate to keep firm until ready to coat.
  5. Temper the Chocolate: Chop 200g of coating chocolate and melt about two-thirds in a heatproof bowl over simmering water, ensuring the bowl doesn’t touch the water. Remove from heat and stir in the remaining chocolate until melted and fully tempered, providing a shiny finish and firm snap.
  6. Coat the Truffles: Dip your fingertips into the tempered chocolate. Pick up each truffle and gently roll it between your fingertips to coat evenly. Allow excess chocolate to drip off before placing truffles back on the parchment-lined tray. Repeat for all truffles and let them set until the chocolate hardens.
  7. Store: Keep the finished truffles in a cool place until ready to serve or gift.
