Ingredients

Scale

Chicken and Garlic Gravy

  • 2 boneless skinless chicken breasts or thighs
  • 6 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups chicken broth
  • ¼ cup heavy cream (optional)
  • Salt and pepper, to taste

Cheesy Mashed Potatoes

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh parsley or chives, for garnish

Instructions

  1. Season and Sear Chicken: Season the chicken breasts or thighs with salt and pepper. Heat oil in a skillet over medium-high heat and sear the chicken until golden on both sides and cooked through, reaching an internal temperature of 165°F (74°C). Once cooked, remove from skillet and keep warm.
  2. Prepare Garlic Base: Reduce heat to medium. In the same skillet, melt the butter and sauté the minced garlic for about 1 minute until fragrant but not browned, to develop flavor for the gravy.
  3. Create roux: Stir in the all-purpose flour to the garlic and butter mixture, cooking for 1 to 2 minutes while stirring constantly. This forms the roux and helps thicken the gravy.
  4. Make the Gravy: Gradually whisk in the chicken broth, ensuring no lumps form. Bring to a simmer and cook until the gravy thickens to a smooth consistency. Optionally, stir in the heavy cream to add richness. Season the gravy with salt and pepper to taste.
  5. Cook Potatoes: Meanwhile, place the peeled and cubed Yukon Gold potatoes into a pot of salted water. Boil for 12 to 15 minutes or until the potatoes are tender when pierced with a fork. Drain thoroughly.
  6. Mash Potatoes: Mash the drained potatoes with the butter, milk, and shredded cheddar cheese until creamy and smooth. Adjust seasoning with salt and pepper as needed.
  7. Assemble and Serve: Plate the cheesy mashed potatoes, top with the sliced cooked chicken, and generously pour the garlic gravy over the chicken. Garnish with chopped fresh parsley or chives before serving.

Notes

  • Use boneless skinless chicken thighs for a juicier option if preferred over breasts.
  • Heavy cream is optional in the gravy but adds a richer texture and flavor.
  • Yukon Gold potatoes are ideal for mashing due to their creamy texture.
  • To make the dish dairy-free, substitute butter and milk with plant-based alternatives and omit the cheese.
  • For a thicker gravy, allow it to simmer longer while stirring gently.
  • Garnishes like fresh parsley or chives add a pop of color and freshness.
