Ingredients

Scale

Main Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/4 cup ketchup, plus more for glazing
  • 2 tablespoons mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup finely chopped onion
  • 2 large eggs, beaten
  • Salt and pepper to taste

Filling

  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper to prevent sticking and make removal easier after baking.
  2. Mix Ingredients: In a large mixing bowl, thoroughly combine ground beef, breadcrumbs, 1/4 cup ketchup, mustard, Worcestershire sauce, finely chopped onion, beaten eggs, salt, and pepper. Mix just until combined to keep the meatloaf tender.
  3. Layering: Press half of the meat mixture evenly into the bottom of the prepared loaf pan. Then, sprinkle the shredded cheddar cheese and crumbled cooked bacon evenly over the meat. Top with the remaining meat mixture, pressing down gently to seal in the filling.
  4. Glaze and Bake: Brush the top of the meatloaf with additional ketchup for a flavorful glaze. Place in the preheated oven and bake for 60 minutes, or until the meatloaf is fully cooked through and the top is nicely caramelized.
  5. Rest and Serve: Once baked, remove the meatloaf from the oven and let it rest in the pan for 10 minutes. This allows the juices to redistribute and makes slicing easier. Serve warm for the best flavor and texture experience.

Notes

  • Use freshly cooked bacon for the best flavor and texture.
  • For a moist meatloaf, avoid overmixing the beef mixture.
  • Letting the meatloaf rest before slicing helps to retain its juiciness.
  • You can substitute cheddar cheese with your favorite cheese for variation.
  • Serve with mashed potatoes or vegetables for a complete meal.
