Ingredients

Scale

Spices and Herbs

  • 2 teaspoons Kosher Salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons light brown sugar
  • 1 teaspoon dried thyme (or 1 tablespoon minced fresh thyme)
  • 1 teaspoon dried sage (or 1 tablespoon minced fresh sage)

Main Ingredient

  • 2 pounds ground pork

Cooking Oil

  • 12 tablespoons avocado or canola oil

Instructions

  1. Mix Spices: In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and dried sage. Mix the spices thoroughly and set aside.
  2. Combine with Pork: Place the ground pork in a large bowl. Add the spice mixture, light brown sugar, and if using fresh herbs instead of dried, add the minced fresh thyme and sage now. Mix everything by hand until well blended and the seasonings are evenly distributed throughout the meat.
  3. Form Patties: Divide the seasoned pork mixture into eight equal portions. Shape each portion into a disc-shaped patty approximately 3 to 4 inches in diameter. Press your thumb gently into the center of each patty to create a small indentation; this helps the patties cook evenly and prevents puffing.
  4. Heat Skillet: Place a large skillet over medium heat and allow it to warm up thoroughly. Once hot, add 1 to 2 tablespoons of avocado or canola oil, swirling to coat the bottom.
  5. Cook Patties: Place the sausage patties in the hot skillet, leaving space between each to prevent overcrowding; cook in batches if necessary. Cook each side for about 5 minutes until golden brown and crispy, ensuring the internal temperature reaches 160°F (71°C) for food safety.
  6. Serve: Remove the cooked patties from the skillet and let them rest briefly. Serve warm and enjoy your flavorful homemade breakfast sausage patties.

Notes

  • Using fresh herbs instead of dried can add a brighter flavor, but dried herbs work well and are more convenient.
  • Make sure not to overcrowd the skillet when cooking to achieve a good sear and even cooking.
  • The thumb indentation in the patties prevents them from puffing up and promotes even cooking.
  • Check the internal temperature with a meat thermometer to ensure they reach 160°F for safe consumption.
  • These sausage patties can be refrigerated for up to 3 days or frozen for longer storage.
