  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper

Salmon and Garnish

  • 4 salmon filets, about pounds, skins on
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches, pitted and thinly sliced
  • Parsley for garnish

Instructions

  1. Prepare the Marinade: In a medium bowl, combine peach preserves, bourbon, 2 tablespoons olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Stir well until everything is fully incorporated. This mixture will yield approximately 1½ cups of marinade. Reserve half of it, about ¾ cup, and refrigerate for later.
  2. Marinate the Salmon: Place the salmon filets in a shallow dish or resealable plastic bag. Pour half of the marinade over the salmon, ensuring each filet is well coated. Cover and refrigerate for at least 30 minutes to 1 hour to allow the flavors to infuse.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
  4. Roast the Salmon: Remove salmon from the marinade and place skin-side down on the prepared baking sheet. Drizzle 1 tablespoon olive oil over the top. Arrange the thinly sliced peaches over and around the salmon. Roast in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Glaze the Salmon: During the last 5 minutes of roasting, brush the reserved marinade over the salmon and peaches to create a glossy finish and deepen the flavor.
