Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when your meatloaf is assembled.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the diced green bell pepper and onion, sautéing for about 5 minutes until softened and fragrant. Remove from heat and set aside.
  3. Prepare Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and black pepper. Mix thoroughly to incorporate all ingredients evenly.
  4. Form First Layer: Press half of the meat mixture evenly into the bottom of a loaf pan, creating a solid base.
  5. Add Cheese and Veggies: Lay 4 slices of provolone cheese over the meat base, then spread the sautéed peppers and onions evenly on top.
  6. Top with Remaining Meat: Add the remaining meat mixture on top of the vegetables, pressing gently to seal the edges and create a compact loaf.
  7. Bake Meatloaf: Place the loaf pan in the preheated oven and bake for 45-50 minutes. In the last 5 minutes of baking, arrange the remaining 4 slices of provolone cheese on top of the meatloaf and bake until the cheese is melted and bubbly.
  8. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5-10 minutes to allow juices to settle. Slice into portions and garnish with chopped fresh parsley before serving.
