Yogurt Base
- 2 cups plain Greek yogurt
- 4 large eggs
- ¼ cup oat flour
- 1 tsp vanilla extract
- 2–4 tbsp maple syrup (optional)
- Preheat Oven: Preheat your oven to 350°F (175°C) and either line an 8×8 inch baking dish with parchment paper or lightly grease it to prevent sticking.
- Mix Ingredients: In a mixing bowl or blender, combine the plain Greek yogurt, eggs, oat flour, vanilla extract, and maple syrup (if using). Blend or stir thoroughly until the mixture is completely smooth and uniform in texture.
- Prepare for Baking: Pour the smooth batter into the prepared baking dish, then use a spatula or back of a spoon to smooth out the top evenly for uniform baking.
- Bake: Place the baking dish in the oven and bake for 35 to 45 minutes. The bars are done when the edges are set and firm while the center remains just slightly jiggly to the touch.
- Cool and Chill: Remove from the oven and allow the bars to cool to room temperature. Then refrigerate for at least 2 hours to fully set before slicing into bars.
